Nothing says Christmas time in our house than baking Christmas Cookies!! And one of our favorites is Chewy Spiced Molasses Cookies. Very similar to a Ginger Chewy Cookie without the ginger, but still with lots of yummy holiday sweet spices! These cookies are so delicious and super easy to make! They stay soft and chewy for days (if you keep them in an airtight container of course) and they freeze very well, if you want to save some for a later date. So give this recipe a try, and let me know what think?!

Holly's Chewy Spiced Cookies:
½ cup (1 stick) butter
¾ cup sugar, plus more for coating
1 large egg
1 ½ cups all-purposed flour
½ tsp. Nutmeg
½ tsp. cinnamon
¼ tsp. ground cloves
¼ tsp. salt
1 tsp. baking soda
¼ cup molasses
Pre-heat over to 350 degrees Fahrenheit. Line baking sheet with parchment paper.
Using a Kitchen-aid (or hand mixer), cream together butter and sugar in a large bowl until light and fluffy, about 3 minutes. Add egg and blend well.
Add flour, nutmeg, cinnamon, ground cloves, salt, baking soda, and molasses and mix until dough is combined. Use a scoop to portion out the dough ball (about 1 TB. each). Roll in sugar and place on cookie sheet about 2 inches apart.
Bake 9 – 10 minutes or until set. Cool completely, storing any leftover in an airtight container. Enjoy!
