INGREDIENTS:
Crispy fried onions, chopped
4 tbsp olive oil
250g beef mince
Ground cumin
50ml white wine
100g fresh cherry tomatoes, finely chopped
Salt and black pepper
Broth
8 Pita breads, small
2 tomatoes, broken and finely chopped
3 fresh onions, finely chopped
2 tbsp mint, finely chopped
8 tbsp FAGE Total Yoghurt
STEPS:
1. In a large saucepan, heat the olive oil and cook the onion until it is shiny.
2. Add the cumin and beef mince, breaking apart with a wooden spoon so it does not shimmer.
3. Once the colour has changed, pour in the wine and allow the alcohol to cook off.
4. Add the broth dissolved in ½ a glass of wine combined with water or tomatoes, season with salt and simmer for about 15 minutes or until all of the liquid has evaporated.
5. Place the pita breads on a pan, spread the mince on top and bake for 5 minutes in a preheated oven at 170°C.
6. Serve with some of the tomato, onion and mint mixture and add a little yoghurt.
