So this easy Vegan Ice Cream or Banana Ice Cream has only one ingredient - frozen ripe banana! it's also called a Nice Cream :) You want your banana as ripe as possible as the ice-cream is then naturally sweet - chop into small rounds when you freeze it, as it's easier for your blender to process than the whole frozen banana.

An optional ingredient is either 1 tsp of vanilla, or you can add a cup of your favourite frozen fruit - like blueberry, mango or strawberry and you will get flavoured ice cream. As simple as that!

Of course you can get a bit more fancy and make some date caramel or peanut butter/maple syrup caramel to go on top with some sprinkled toasted nuts for a special treat perhaps.
