Ingredients
300 gms frozen or fresh shrimp peeled and deveined
1 tbsp olive oil
1/2 whole medium onion (about 1/3 cup)
3 cloves garlic minced
1/2 cup dry white wine
1 tbsp lemon juice
2 tbsp unsalted butter
1 pinch sea salt and pepper, to taste
Finely Chopped parsley
Sauce / Paste
2 tbsp hot piri piri sauce
1 tbsp olive oil
1 clove garlic, minced
1 tsp paprika
1 tbsp (50 gms) tomato paste
Instructions
Mix the sauce ingredients in a bowl and keep aside.
Heat oil on medium flame.
Add onion and cook till slightly browned.
Add garlic and cook until fragrant (1 mins).
Stir in sauce and cook for 2 mins.
Add wine and cook until reduced by half (2 mins)
Add shrimp, lemon juice, salt, pepper, cover and cook on low flame for 5 mins.
Add butter.
Stir for 1 minute.
Taste for salt. to counter the taste of extra salt, add the juice of half a lime.
Sprinkle with fresh parsley and serve with lightly toasted slices of baguette.
