We made instant mashed potatoes ourselves and it came out surprisingly well. These tend to be much denser and more filling when you rehydrate them. It doesn't take much to do you.

Normally we use instant potatoes only for thickeners in other things. We can eat these just like fresh made mashed potatoes. The flavor is a lot stronger.
