Today let's make Banana Flower Stir Fry | Vazhachund Thoran | Kerala Style Vazha koombu Thoran | Kudappan Thoran. Easy, fiber rich and an awesome side dish for rice. Banana flower and coconut make a wonderful combination. This vegan banana flower stir fry is mildly spiced, this delectable stir-fry make you fall in love with it, without drowning it in a host of spices and other strong flavors.
Banana flowers (aka banana blossoms) are exactly what their name suggests: the blossoms from a banana tree. They're a completely edible delicacy and can be found fresh at roadside stands and farmers markets, wherever bananas are grown, but are especially prevalent in Asia.

INGREDIENTS:
Banana flowers (banana blossoms): 1 medium sized thinly chopped
Mustard seeds: 1 tsp
Coconut oil: 1 tbsp
Curry leaves: 2 to 3
Turmeric powder: 1/4 tsp
Salt to taste
TO PREPARE COCONUT MIXTURE:
Shallots: 10
Green chili: 2 chopped
Grated coconut: 1 cup
Garlic: 4 small cloves
Ginger: 1 small piece
INSTRUCTIONS/DIRECTIONS:
Clean & chop the banana flower:
Remove the tough reddish leaves (bracts) and florets one by one. The intermediary leaves, that will be pale pinkish in color, are edible and tender. As you peel away the dark bracts you will reach a white or pale-colored heart, also the leaves become too thin to peel. Trim off the conical stem and discard. Then wash the pale colored heart and finely chop them.
Prepare Bitter gourd Stir Fry:
1. Crush all 'COCONUT MIXTURE' ingredients together in a mixer jar and keep it aside for later use.
2. HEAT oil in a lidded pan on medium heat, ADD mustard seeds let it splutter, then add curry leaves and turmeric powder, fry for 30 second.
3. Then ADD the finely chopped banana flower, stir fry for 2 minutes then add the coconut mixture and salt to taste, mix well, cover and cook for about 8 to 10 minutes, occasionally stirring.
4. Once it is cooked check the flavor and add more salt if needed, then take the lid off and stir fry few more minutes if there is any excess moisture. TURN-OFF the stove and serve with rice or chapati.
RECIPE NOTES/TIPS:
· DO NOT add water while cooking banana flower.
· Adjust the number of green chilies depending on your spice level.
