Resep Sup Bakso Ayam Sayuran/ Yong Tau Foo (untuk 6-7 porsi)
Bahan adonan bakso ayam:
400 gr dada ayam filet
2 sdt garam
1 sdm gula pasir
2 sdt kaldu bubuk / penyedap
1 butir putih telur
2 sdt baking powder
100 gr tahu putih
2 sdm bawang merah goreng
1 siung bawang putih
50 gr maizena / tepung sagu / tepung tapioka
80-100 ml air dingin Le Minerale
1 sdm kecap ikan, opsional
¼ sdt merica
Bahan kaldu ayam:
300 gr tulang rongkong ayam, rebus 5 menit
3 liter air Le Minerale
2 sdt garam
⅛ sdt merica
1 sdm gula pasir
2 sdt kaldu jamur / penyedap
Pelengkap:
Tahu pong, belah
Paprika merah, potong & buang biji
Pare, potong, rendam dengan air garam, rebus
Terong ungu
Brokoli, potong, rebus
Kulit kembang tahu

Daun bawang cung
Sambal rawit merah
Jeruk nipis
Langkah:
1. Didihkan air lalu masukkan tulang rongkong. Rebus selama 1 jam di api kecil kemudian tambahkan garam, merica, gula pasir, dan kaldu jamur, aduk rata
2. Di dalam food processor masukkan dada ayam, garam, kaldu jamur, gula pasir, merica, bawang putih, dan bawang merah goreng, haluskan hingga lengket
3. Masukkan tahu putih, putih telur, baking powder, kecap ikan, maizena, dan air es, haluskan hingga tercampur rata lalu masukkan sebagian adonan ke dalam piping bag
4. Isi tahu pong dengan adonan dan semprotkan adonan di tengah kulit tahu, lipat lalu pipihkan kemudian goreng di api sedang kecil hingga sedikit kecokelatan, tiriskan
5. Potong miring terong, belah bagian tengah lalu isi dengan adonan, goreng di api sedang kecil hingga kecokelatan, tiriskan
6. Isi paprika, pare, dan brokoli dengan adonan lalu ratakan dengan bantuan air. Rebus di api sedang kecil beberapa saat hingga matang, tiriskan
7. Susun pelengkap di dalam mangkuk lalu tuang kuah, daun bawang cung, dan garlic oil
8. Sup bakso ayam sayuran siap disajikan

Chicken Meatball Veggie Soup / Yong Tau Foo Recipe (yield 6-7 servings)
Chicken Meatball Dough ingredients:
400 g chicken breast filet
2 tsp salt
1 tbsp sugar
2 tsp stock powder / MSG
1 pc egg white
2 tsp baking powder
100 g white tofu
2 tbsp fried shallot
1 clove garlic
50 g cornstarch / sago flour / tapioca flour
80-100 ml Le Minerale cold water
1 tbsp fish sauce, optional
¼ tsp pepper
Chicken Broth ingredients:
300 g chicken carcass, boiled for 5 minutes
3 liter Le Minerale water
2 tsp salt
⅛ tsp pepper
1 tbsp sugar
2 tsp mushroom stock / MSG
Add-ons:
Tofu puffs, sliced
Red bell pepper, sliced & deseeded
Bitter melon, sliced, soaked in salt water, boiled
Purple eggplant
Broccoli, sliced, boiled
Tofu skin
Garlic oil ([ Ссылка ])
Spring onion
Red Thai Chili Sambal
Lime
Steps:
1. Boil water, then add the carcass in. Boil for 1 hour on low heat, then add salt, pepper, sugar, and mushroom stock. Stir.
2. In a food processor, add chicken breast filet, salt, mushroom stock, sugar, pepper, garlic, and fried shallots. Blend until sticky.
3. Add white tofu, egg whites, baking powder, fish sauce, cornstarch, and cold water. Blend until smooth, then add some of the dough into a piping bag.
4. Fill the tofu puffs with the dough. Pipe the dough on the tofu skin, then fold and flatten. Next, fry everything on medium-low heat until lightly browned. Set aside.
5. Slice the eggplant diagonally. Make a slit and fill it with the dough. Fry on medium-low heat until browned. Set aside.
6. Fill the bell pepper, bitter melon, and broccoli with the dough. Smooth out the dough with water. Boil on medium-low heat for a moment until cooked. Set aside.
7. Assemble the add-ons in a bowl, then pour the broth in. Add spring onions and garlic oil.
8. Chicken Meatball Veggie Soup is ready to serve.
