Melting chocolate isn't hard, but there are a few tips and tricks that will ensure your chocolate melts to a smooth, glossy finish and doesn't seize in the process.
Following any of the methods in this video ensures that your chocolate will melt with success! The key is to avoid excessive heat and contact with steam or water. If chocolate comes in contact with water or steam whilst melting, it will seize. This means it'll become thick and grainy instead of smooth and glossy.
To prevent seizing when using a double boiler, avoid letting the simmering water get too hot or come to a full boil; do not let the bowl touch the water in the pan; and be sure that the bowl fits snugly on top of the pan so that steam cannot escape.
If the potential of seizing scares you - no worries! Use the microwave or oven method to eliminate the risk of coming into contact with water or steam all together!
