Here is my viral sourdough apple fritter focaccia recipe! This video has over 2.5 million views across my platforms and is a hit from everyone that tries it!
Here is the recipe!
Dough
The night before baking mixed together
100 g active sourdough starter
375 g filtered water
30 g honey
500 g unbleached flour
10 g of salt
(Any accidentally overproofed dough will also work for this recipe!)
Mix all ingredients together and do 1-2 sets of stretch and folds. Leave on the counter for 10-12 hours overnight. This step is very flexible!
-The next morning dump your dough into a greased 9 x 13 pan
-Make cinnamon sugar butter and cut & peel one apple.
Cinnamon sugar butter:
One stick of butter
1/4 to 1/2 cup of brown sugar
1-2 tablespoons of cinnamon
-Top the dough with cinnamon sugar butter and apple making sure to dimple it into the dough until it is well incorporated
-Cover with foil and bake at 425° for 15 minutes covered, and 20 minutes uncovered
-While the focaccia is baking, make the glaze.
Glaze:
One cup of powdered sugar
1 teaspoon of vanilla
About 1 tablespoon of milk or cream
-Once focaccia comes out of the oven top with glaze
-Cool, Slice, and Enjoy!
