It smells and tastes amazing, is so easy to put to together, and goes wonderfully with butter! Sometimes cornbread can turn out dry and crumbly. But the sour cream and butter in this recipe keep is moist, almost juicy! The jalapeño adds the perfect kick, and the cheese takes the flavor up to a whole new level! Here is the full written recipe for your convenience:
1/2 cup melted butter
2 eggs
3/4 cup milk
3/4 cup sour cream
1/2 tsp salt
Optional: 1/2 tsp chives
1 chopped jalapeño
1 tbsp honey
2 boxes jiffy cornbread mix
1/2 cup shredded mozzarella (or substitute with cheddar)
Preheat oven to 400 degrees.
In a bowl, add all above ingredients and mix really well. Grease 9x13 baking dish or cake pan. Pour the cornbread batter into the baing dish. Bake for 30-40 minutes, inserting a toothpick to check for doneness. When you remove from the oven, wait a few minutes before cutting into the cornbread. Serve hot!
