- 2 lbs Chicken Thighs & Legs (Dark Meat)
- Salt
- 4 Shallots OR 1 Medium Onion, Diced
- 1 Celery Rib, Diced
- 4-5 Thyme Sprigs
- 2 Cloves Garlic, Minced
- 6 Strips Bacon, Chopped
- 2 Tbsp Dry White Wine OR Brandy or Whisky
- 2 Tbsp Flour
- 1/3 Cup Chicken Stock
- 1 1/2 Cup Hard Dry Apple Cider
- 2 Apples, Peeled & Cored into Wedges
- 1 Cup Heavy Cream (More If Extra Sauce Is Desired)
