Here is my very simple yet delicious way of making the Nigerian fried Rice. With this recipe, I can make this meal for a visitor that just called an hour or even less before arrival.I hope you enjoy it.
Ingredients
I cup of uncooked Rice (Approximately 3 Cups of cooked Rice)
1 Cup of Mixed Vegetables (I used Carrots, sweet Peas, Sweet Corn and Green Beans)
1 medium sized Onion
2 Scallions(Green Onion)
Beef Liver (optional)
1 Teaspoon of Curry powder
1/2 Teaspoon of Thyme
3/4 cup of chicken or Turkey stock
1 Stock cube (Bouillon cube)
4 Tablespoons of Oil for frying
Salt to taste
