Bhendi/okra is cooked in various ways but today's tip is about maintaining the crunch and color along with keeping the nutrients intact that are often reduced due to over cooking.
1. Never add salt while cooking as it will end up making it sticky.
2. Salt should be added just before serving the dish.
3. If you like to maintain the green color, do not cover it with a lid. May take a bit longer to cook but it definitely looks better.
I love to eat fresh bhendi in the raw form which i do coz it grown organically in my garden. But ideally bhendi should never be overcooked to maintain its high nutritional value.
It has Vit E, Vit C, folate, magnesium, phosphorus, iron, copper, manganese and loads of dietary fibre.
It is an ideal food to maintain good gut health.
