Today I will show you how to make this super easy loaded potato soup, you can make it plain potato soup, bacon cheddar potato soup or the fully loaded potato soup. Recipe below
Crockpot Loaded Potato Soup Recipe
1 - 32 ounce container Chicken broth
3/4 cup onions (chopped)
3/4 cup carrots (chopped)
1 cup White Sharp Cheddar Cheese plus extra cheese for topping soup when serving
2 TBS Butter or margarine
Salt and Pepper to taste
1 1/2 cup cooked bacon (Crumbled) 1 cup for soup and 1/2 cup for topping soup when serving
1 cup half & half
1/2 cup sour cream plus extra for topping before serving
4 TPS finely chopped Chives for topping soup before serving (optional)
5-6 cups potatoes peeled and diced (about 1/2 inches)
Combine potatoes, chicken broth, onions, carrots, butter, salt and pepper in your slow cooker (crock pot). Cook on HIGH for 4-5 hours until potatoes are fully cooked and tender.
Turn heat to low, and add half & half, bacon, cheddar cheese and sour cream stir until well blended, cook until thick and creamy 15-20 minutes or more.
Place soup in bowl, top with a spoon full of sour cream, sprinkle with bacon crumbles, add cheddar cheese and sprinkle with chives. ENJOY!!
