Hi friends, today we make one of my all-time favorite dishes, Baghali Polo Ba Gardan (باقلی پلو با گردن) , or Lamb Neck with Fava Bean Rice. This is a truly delicious dish and I hope you make it. It does take time and patience, but you will be rewarded.
Ingredients List:
- 2 1/2 Kilogram (3 pounds of lamb neck)
- 2 Onion
- 1 Head of Garlic
- 3 Tablespoon Tomato Paste
- 2 Bay Leafs
- 2 Cinnamon Sticks
- 1 Teaspoon Turmeric
- 1 Teaspoon Black Pepper
- Half a teaspoon red pepper
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Coriander Seed Powder
- 1 Teaspoon (Salt to taste)
- Liquid Saffron
- Cooking Oil
For the Rice
- 3 Cups of Rice
- 14 ounces (400 grams) Double Peeled Green Fava
- 1/2 Cup Dried Dill
