Easy CASSAVA CAKE ROLL | How to Make CASSAVA ROLL | CASSAVA RECIPE
INGREDIENTS:
BUKAYO FILLING:
1 cup brown sugar
1 tbsp. cornstarch(optional)
1/3 cup water(optional)
2 cups grated mature coconut
1/3 cup muscovado sugar
CASSAVA ROLL:
4 cups grated fresh cassava
1 cup coconut milk(optional)
1 cup water
1 tbsp. pandan flavor
1 tbsp lye water(optional)
PROCEDURES:
1. Combine brown sugar, cornstarch and water. Set the flame over medium heat. Let it simmer while stirring regularly.
2. Once the mixture is boiling, add the grated mature coconut. Stir to cook. I want a bit darker so I add muscovado sugar. Stir constantly until liquid is absorbed by the coconut meat.
3. Slightly squeeze and remove the juice of grated cassava.
4. In a bowl, combine grated cassava, coconut milk, water, pandan flavor and lye water(I add this because it will make the cassava soft).
5. Divide the mixture into 4 parts, then add each violet/ube flavor, green/pandan flavor, pink/strawberry flavor and yellow/original flavor.
6. In a pan with banana leaf liner, pour the mixture.
7. Spread evenly and tap.
8. Steam for 10-15 minutes.
9. Remove from steamer once done and then unmold. Let it cool down before adding the bukayo filling.
10. Divide the bukayo filling into four and spread it on the steamed cassava. Spread evenly and then roll into a log. Cut each into 6 pieces.
11. Serve and enjoy!
