CHICKEN DUM BIRYANI
INGREDIENTS
Rice - 600 gm wash & soak about 30 min
TO COOK RICE
Water
Bay leaf - 2
Cardamom - 2
Clove - 3
Cinnamon - 1"
Coriander leaves -
Ghee - 1 tsp
Salt - 3 tsp
Lemon juice - 1/2 lime
Onion - 4 spliced
Oil - for frying the onion
TO DRY ROAST & GRIND MASALA ( Biryani masala )
Fennel seeds - 1/2 tsp
Cumin seeds - 1 tsp
Coriander seeds - 1 tbsp
Black pepper - 1 tsp
Javitri - small piece
Jaifal - small piece
Clove - 4 pc
Green cardamom - 4
Cinnamon stick - 1"
Bay leaf - 2
MARINATION
Chicken - 750 gm
Ginger garlic paste - 2 tbsp
Salt - to taste
Red chili powder - 1 tsp
Turmeric powder - 1/2 tsp
Kashmiri red chili powder - 2 tsp
Biryani masala - 2 tsp
Chicken masala - 1 tsp
Desi ghee - 1 tsp
Coriander leaves - chopped
Curd - 3 tbsp
Lemon juice - 1 lime
Fried onion
Keep it for 30 minutes
TO COOK CHICKEN
Mustard oil - 1 tbsp
Onion - 1 sliced
Marinated chicken
FOR LAYERING
Ghee - 1 tsp
Fried onion
Coriander leaves
Javitri jayfal small amount & food colour
