Onion-Parsley Crackers in the Dehydrator
Makes 2 sheets crackers
2 medium ripe tomatoes
1 bunch fresh parsley stems
1 cup fresh parsley leaves
2 medium onions, quartered
1/2 cup fresh ground flaxseeds
1 1/2 tablespoons turmeric
1 1/2 tablespoons smoked paprika
1/2 teaspoon sea salt (optional)
1/4 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper
Finely dice tomatoes and parsley leaves in food processer.
Wet chop onions and parsely stems in drink blender. (See video) Drain off water.
In a large bowl, mix drained onions and parsley with tomatoes and parsley leaves. Mix in remaining ingredients until well incorporated. Divide “batter” in half and spread evenly and thinly (1/8-inch) across dehydrator sheets. Lightly score batter.
Set dryer temperature to 135ºF; dry for 3 hours. Flip cracker sheets and remove sheet; leaving crackers to dry on tray. Return to dryer; dry another 3 to 4 hours. Crackers should be crisp and dry in center.
Break crackers into servings. Store in air-tight container and keep in cool dry place. Best eaten within a week.
