Ingredients:
1 kg beef cut into cubes
4 cloves garlic chopped
1 pc onion chopped
1 pc tomato chopped
4 cups water
1/2 cup tomato paste
2 cups coconut milk
5 tbsp peanut butter
1/2 cup grated cheese
1 big carrots cut into cubes
2 medium potatoes cut into cubes
1 pc red bell pepper
3 tbsp cooking oil
salt and pepper to taste
cooked green peas (optional)
Instructions:
1. Heat the cooking oil in the cooking pot.
2. Saute garlic, onion and tomato.
3. Add the beef. Cook for 5 minutes or until the color turns light brown.
4. Add the water. Cover and cook the beef until it becomes tender for about 1 to 2 hours if using ordinary pot. If using a pressure cooker, you may cook for about 30 minutes.
5. Add the tomato paste and mix well.
6. Let it simmer for about 5 minutes or until the sauce becomes thicker.
7. Add the bay leaves. Stir and simmer.
8. Add the coconut milk. Mix well.
9. Add salt and ground pepper to taste.
10. Add the peanut butter and stir.
11. Add the potato and carrots. Cover and cook for 8 to 10 minutes.
12. Add grated cheese and mix evenly.
13. add the red bell pepper. Cook for another 5 minutes.
14. Put in a serving plate. Share and enjoy!
