Our beer can chicken is so easy, anyone can make it.
We used the best whole chicken we could find. We sourced a local, organic free range chicken. The few extra bucks is well worth it.
You can use any beer you like or have on hand for this recipe.
Method:
Clean and rinse the chicken in cold water. Use scissors to remove any skin or fat that is not intact.
Dry with paper towels to remove any moisture.
Use any rub or seasoning you prefer and generously coat the chicken.
Heat your grill to around 325 degrees, I prefer to cook at a lower temperature to make sure the outside skin browns, but does not burn.
Place the chicken on top of the beer can, making sure the can goes inside the cavity.
Arrange the legs of the chicken to make sure it does not tip over during cooking.
Cook to an internal temperature of 165 degrees. Use a thermometer and insert in the plumpest part of the breast along the bone.
