Acrylamide is a toxin that is produced when certain foods are heated to high temperatures, usually above 120°C (248°F). It is commonly found in breads, cookies, potato chips, coffee and even pop-corn. While acrylamide has been shown to be a carcinogen in rodents, a 2014 meta-analysis published in the ‘International Journal of Cancer’ titeled :”Dietary acrylamide and cancer risk: An updated meta-analysis” found that “dietary acrylamide is not related to the risk of most common cancers”. The authors did find a modest association between dietary acrylamide and an increased risk in kidney, endometrial, and ovarian cancer in never smokers only.
While it is important to be aware of the sources of acrylamide, I think having your daily coffee and occasional popcorn is fine.
