You will love these cheesy, soft and delicate croissants! Here is my recipe! I hope you enjoy the video!
-1 ½ cups of lukewarm milk (3.25)
-1” cube of fresh yeast OR 2 teaspoons of dried yeast
-1 teaspoon of sugar
Dissolve and set aside.
-In a big bowl sift 3 ½ cups of all-purpose flour
Add to bowl of stand mixer. Attach hook.
-Add 1 cup of grated Parmesan cheese
-1 tablespoon of salt
Mix for 2 minutes at speed #2.
Stream in milk, yeast and sugar mixture gradually.
Scrape the flour on the sides of bowl with a rubber spatula.
-Add 1/3 cup of extra virgin olive oil
Mix for 10 minutes at speed #2.
Dough will form a ball, will be silky smooth, not sticky to the touch.
Transfer on working surface and knead for two minutes.
Shape into a ball by rotating and pinching the dough at the bottom.
Dust bowl with flour and place it inside.
Cover with plastic wrap and a cloth.
Place the bowl inside the oven along with a small pot of boiling water.
Let rise for 2 hours until doubled in size.
Leave oven light on and power off.
Once doubled in size, dust working surface with flour and transfer the dough.
Knead for two minutes then shape into a log and flatten with fingers.
Roll out into a 24” x 16” rectangle.
Cut dough in half, using a pizza cutter.
Cut 16 triangles measuring measuring 3” wide x 8” long.
Brush dough with milk.
Roll each triangle from wide to pointy end.
Curve and place onto a parchment paper covered tray, placing pointy end underneath.
-Eggwash: 1 egg yolk + 2 tablespoons of milk
Brush croissants gently.
Let rise for one hour in oven with light on, temperature off.
After one hour set on counter.
Preheat oven at 375 degrees F.
Bake for 20-25 minutes on bottom rack.
