Candied Ginger is made by thinly slicing fresh ginger root and boiling in a sugar syrup. Then the bite size ginger pieces are rolled in sugar and left to air dry for 24 hrs.
Resulting in a sweet,spicy,peppery,chewy/crunchy treat!
Candied Ginger still keeps it's aromatic and spicy qualities and making it at home not only eliminates added preservatives and chemicals but you also get left with a Ginger Spiced Simple Syrup to sweeten cocktails,lemonades or teas with! You'll never want to buy candied ginger at the store again!
It also literally lasts forever if you freeze it in an airtight container.
I have found that Natural Cane Sugar is the best choice for coating the ginger in the last step but I was all out so I used standard white sugar.( try to find organic natural cane sugar if you can!!)
You can eat the candied ginger As-is for nausea,digestions issues even heart burn! Or you can chop it up finely and use in cooking,baking or Jam Making.
