Welcome to a short recipe on how to make kluski kopytka. Kluski Kopytka are a traditional polish side and also one of my favorite sides. Enjoy.
Kluski Kopytka:
Ingredients:
4 Potatoes (800g - 2 Pounds)
Salt
2 Eggs
Wheat Flour
Potato Flour
Olive Oil
Butter
Steps:
Start off by peeling potatoes then washing them
Set aside potatoes in a pot and fill the pot up with water (⅔) put on lid, boil water and season with salt
Once potatoes are boiled for up to 30 min or so. Stick something in the potatoes to make sure they have been cooked. If potatoes are still hard keep them boiling!
Once boiled, drain water from pot and mash your potatoes well.
Let mashed potatoes cool until room temperature
Break 2 eggs in the pot
Add 10 Spoons of wheat flour
Add 10 Spoons of potato flour (If sticky add more)
Knead the dough first with a spoon then with your hands (Be Gentle, Tip: Like it’s a Feather)
Take out dough onto a cutting board and knead some more with your hands
Split dough into fourths
Roll out 1 piece of dough (If to much split again to be easier to work with)
Cut dough the size you want your kopytka to be
In the meantime boil a new pot of water (season with salt) 2 spoons of Oil (so kluski don’t stick to each other)
Carefully drop each kopytka into the water
Slowly stir kopytka from the bottom of the pot (Wooden Spoon) Put on Lid
Once Kopytka have reached the top cook for 2-5 more mins
Take out Kopytka with a Skimmer
Melt butter on a pan and drizzle on kopytka for a nice finish.
