Gluten Free Vegetarian Quesadilla
Ingredients:
4 flour tortillas, if gluten free use Siete cassava flour tortillas
2 organic zucchini, cut into small chunks
1 large organic carrot, grated
1 cup of organic broccoli, cut into small pieces
8 leaves of fresh basil, stacked, rolled and sliced then chopped fine
Butter, organic and pasture raised
Grated cheddar cheese
Directions:
In a large frying pan add 1 to 2 Tablespoons of olive oil and heat over medium high heat. Once hot add the zucchini, carrots, and broccoli. Saute stirring frequently for about 10 minutes or until the veggies soften and caramelize some.
Once done, place the veggies in a bowl to keep warm. Wipe out the frying pan with a paper towel and place the pan over medium low heat. Add a teaspoon or two of butter and let it melt.
Place the tortilla into the butter and add a layer of cheese. Spread the cheese over the whole tortilla.
Next add a generous layer of veggies on top, spreading over the tortilla. Sprinkle the basil over the veggies and then top with more cheese.
Place a tortilla over the top and add 1 teaspoon of butter. Cook slowly so the cheese has a chance to melt and the bottom tortilla can brown up nicely.
Once the bottom tortilla is golden brown, carefully flip the quesadilla over and continue to cook until it is also golden brown and all the cheese has melted.
Serve with sour cream, guacamole and or salsa. Enjoy!
