One of the most popular bean recipes in our culture is Puerto Rican red beans (habichuelas).
Here’s how to make Puerto Rican style red beans:
Pour sofrito into a medium sauce pan, then add sazon and chicken bouillon. Stir. Add the water. Stir. Drain and rinse the beans then pour the beans into the sauce pan. Add the chopped potatoes, olives, tomato sauce, and bay leaves. Stir. Reduce heat to medium. Put the lid on the sauce pan and cook for about 15-20 minutes until the potatoes are soft. Do not forget to remove the bay leaves before serving.
Ingredients:
3 tablespoons of my homemade sofrito
1 tablespoon of my homemade Sazon
2 teaspoons of chicken bouillon
2 cups of water
1/2 cup of chopped potatoes
5 olives
2 tablespoons of tomato sauce
2 large bay leaves
1 can of light red beans
