If you weren’t already sure about how easy and delicious braised short ribs can be, consider this straightforward recipe. These braised short ribs are so succulent and the flavor of the marinade is insanely delicious. I really hope you give this Korean style short rib sandwich recipe a try. Ingredients
2 Pounds Short Ribs Cut into 2" Pieces
⅓ Cup Soy Sauce
⅓ Cup Brown Sugar
⅓ Cup Rice Wine
1 Tablespoon Sesame Oil
2 Tablespoons of Gochujang
1 Medium Onion, Peeled and Quartered
5 Garlic Cloves
2 Asian Pear or any Pear, Peeled, Cored and Quartered
1 2-inch Chunk of Ginger
2 Teaspoon Sesame Seeds
Braising Liquid
1 Medium Onions
2 Garlic Cloves Minced
1 Cup of Amber Beer
1 Cup of Beef Broth or Water
Recipe:
Rinse short ribs in cold water, pat dry and place in a bowl or a 1 gallon disposable bag.
Blend marinade ingredients together and pour over short ribs.
Reserve 1 cup of the marinade for braising
Refrigerate short ribs overnight for best results
Bring to room temperature
Heat a Dutch oven over medium-high heat with 2 tablespoons of canola oil
Brown all sides and remove from Dutch onion
Add medium onion and 2 cloves of garlic to Dutch oven for 1 minute - Stir occasionally
Add short ribs to Dutch oven
Add 1 Cup of Amber Beer
Add 1 Cup of Marinade
Add 1 Cup of Beef Broth or Water
Braise for 3 Hours on Low Heat (Check occasionally to see if you need more water)
Toast Brioche Buns
Add Braised Short Ribs to Heated Pan for about 1 Minute
Add Caramelized Onions to Top of Braised Short Ribs
Add Melting Cheese (We Used Havarti Cheese)
Add Meat, Onions & Cheese to Toasted Bun
Add Sliced Avocado
Add Sriracha Mayo
Caramelized Onions
Slice 1 to 2 onions in a half-moon approximately ¼” wide
Melt 1 Tablespoon of Butter on low heat in a Shallow Pan
Add Onions to Pan
Add 1 Teaspoon of Salt
Cook for approximately 30 minutes - Occasionally stirring onions until caramelized
Sriracha Mayo
Mix sriracha and Mayonnaise Together to desired Heat Level
