Kale Thoran
Kale or leaf cabbage, is a dark green leafy vegetable which hails from the cabbage family, which also includes broccoli, cauliflower ad collards.
It has long been common across much of Europe.Kale is one of the most nutritious plant foods loaded with all sort of beneficial compounds,
some of which have powerful medicinal properties.
This recipe is made in the traditional Kerala style, with grated coconut and cooked dal to make it more healthy and tasty.

Kale Thoran
Preparation Time:15 minutes
Cooking Time:5-10 minutes
Serves:4-6
Ingredients:-
1 Bunch Crispy Green Kale, finely chopped
1/2 Cup Green Onion or spring onion, cut
1/2 Cup Grated Coconut
1/4 Cup Cooked Toor Dal or Sambhar Dal
1 Tsp Black Mustard Seeds
1 Tsp Whole Urad Seeds
1 Tsp Red Chilli Flakes
1 Tsp Coconut Oil
Salt to taste
Process:-
Add coconut oil to the pan.Splutter the mustard seeds.Add the urad seeds and mix until lightly brown.Add the green onions and mix until soft.
Add the red chilli flakes, make sure not to burn it:-)Add the chopped Kale leaves and mix thoroughly.
Cover and cook for 1-2 minutes.Open the lid and mix lightly, add enough salt and grated coconut.Mix again and cook for 1 more minute with lid closed.
Finally add in the cooked dal, give it a good mix and cook with lid closed for less than a minute.
Delicious and super healthy Kale is ready to serve.
Enjoy it with rotis, porridge, rice or even as it is:-)
Notes:-
1.Do not add any water while cooking kale or it will turn soggy.
2.Make sure not to overcook the kale.The texture should be slightly crunchy.
3.Try to use fresh kale for the best results.
