Don't you love coming home after a long day of work and dinner is already done?!? Now that I am back at work, crockpot meals have been saving me every evening! I hope you enjoy!
CHICKEN & GRAVY
3-4 boneless skinless chicken thighs or breasts
1 cream of chicken
2 brown gravy packets
chopped green onion
rice
-mix 1 gravy packet according to package directions and pour into the crockpot. layer chicken and pour cream of chicken on top. mix second gravy packet and pour over chicken. cook on low 6-8 hours. shred chicken and serve over rice. top with chopped green onion. for a less salty taste, choose low sodium cream of chicken and gravy
MEATLOAF & POTATOES
2 lbs ground beef
1 onion soup mix
1 egg
1/2 cup breadcrumbs
3-4 small potatoes
GLAZE
1/2 cup ketchup
1 tbsp mustard
1 tbsp Worcestershire sauce
1 tbsp brown sugar
-mix meat, egg, onion soup mix and breadcrumbs well with hands and form into loaf shape. line crockpot with 2 layers of foil and place on one side. chop potatoes into cubes and place next to potatoes. drizzle with olive oil and uncle chris' steak seasoning. cook low 8 hours. top with glaze mixture
SHREDDED BEEF TACOS
1 small onion chopped
2-3 lb chuck tender roast
1 cup of beef broth
1 tomato paste
1 tsp cumin
1 tbsp chili powder
2-3 limes
-lay roast in pot and top with onion, broth and seasonings. cook on high 6 hours. if you cook on low temp, make sure it cooks for about 10 hours so it is easy to shred. shred and add in tomato paste and let it continue to warm for 30 minutes to an hour. squeeze lime juice on top and eat with tortillas and your favorite taco toppings.
POOR MAN'S STEW
1 bag of baby carrots
1 lb cooked ground beef
1 chopped onion
3 small potatoes cubed
1-2 tbsp of garlic
1 tomato paste
1 tsp oregano (optional)
1 tsp onion powder
-mix all ingredients together and cook on low for 8 hours.
SLOPPY JOES
2 lbs cooked ground beef
2 tbsp butter
1/2 onion chopped
1 tomato paste
3 tbsp brown sugar
1/2 cup ketchup
2 tbsp Worcestershire sauce
1 tbsp vinegar
1 tbsp mustard
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
-mix all ingredients together and cook on low 8 hours. serve on buns with pickles!
