What is a burr? A burr indicates that you have sharpened to the edge or apex of your knife. As you sharpen and remove material from one side of the knife, eventually some of that material will get pushed over to the opposite side forming a burr.
You can feel the burr by running your finger down the side of the knife and it will catch on a fine wire. Once you form a burr down the entire edge, your ready to start on the other side.
