Simple tutorial with Chef Pi Tou showing us how to cook and prepare the various ingredients for steamed Sea bass Neung Manau from start to finish.
ปลานึ่งมะนาว Pla Neung Manau in Thai
Here's the recipe:
Large whole seabass (ask your fishmonger to descale it and gut it)
10 Cloves of garlic
10g of red and green birds eye chilli
3 large limes
1 Tbsp of sugar
1 Tbsp of fish sauce
10g Fresh coriander

As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.
