Using a fresh leg of lamb to make a rich hearty Lamb Stew with basic stew veggies and common spices you'll have at home. A rich and creamy stew which highlights the unique flavor of the lamb with a distinct nudge of cilantro.
Hearty Lamb Stew
What I used - Recipe
Fresh
3-4 pound leg of lamb, de-boned, trimmed and cut into 1 1/2 inch cubes
2 - bell peppers cut into wide strips - I used 1 red, 1 green
1 - medium onion sliced thick so it doesn't totally disappear
6-8 cloves of garlic crushed/broken
1 - whole bunch of cilantro leaves, de-stemmed
7-8 - Golden potatoes sliced in chunks
1 - pound fresh young carrots
Pantry
1 - pkg beef stew seasoning mix, combined with 16 ounces of cold water
1 - beef broth 32 oz, adjust as needed - you’ll be simmering it for a while
Spice
1 - tsp salt - to taste
1 - tsp black pepper - to taste
1 - tsp garlic powder
2 - bay leaves
1 - corn starch for thickening
4-6 ounces - vegetable oil for browning the meat and softening the veggies
How I did it - you do it your way
a. De-bone and cut meat into cubes. Add a little oil to your pan and brown the meat until no redness is obvious. You can add the salt, pepper and garlic powder now. Remove the meat and juices from the pan and set aside.
b. Add a little more oil to you pan along with your peeled and slice onions, peppers, garlic. Fry the veggies stirring around until they start to brown and soften a bit. When the veggies are almost ready add 1/4th of your bunch cilantro.
c. Add back, your meat and juices along with 32 ounces of beef broth. Use less broth if making a smaller portion.
d. Bring the mixture to a light simmer. Add your beef stew mixture (mixed in cool water) and again bring it to a simmer.
e. Either/Or - heat oven to 325 degrees and stew the stew for 1 1/2 hours or you can continue to cook it on the stove top at a slow simmer.
f. Add the potatoes, carrots and the remainder of the cilantro and either return to the oven or stovetop for another hour or so, until your potatoes and carrots are done. Your meat is going to be falling apart.
g. Serve
thicken with a corn starch slurry as necessary …
Notes - Focus is on the boldness of the lamb and cilantro with the veggies being somewhat neutral
Consider substituting thick sliced eggplant for the root veggies
Consider increase coarse pepper ++++ and a shot of vinegar
Go overboard with heavy cream and curry…. Oh yeah
