INGREDIENTS
Mutton – 1.5 kg (3 lbs)
Crushed Black Pepper – 2 tsp
Peppercorns-3-5
Cloves - 5
Cinnamon sticks - 3 small pieces
Cardamom- 5
Ginger -1 big piece
Green chilies- 5
Onions- 3 big onions
Coriander powder – 2 tsp
Carrots- 2
Potatoes- 5
Salt-as required
Coconut milk- 2 cups
Coconut oil – 10 tsp
Curry leaves - 3 sprigs
Salt – As required
Cashew nuts – ½ cup
Raisins – ¼ cup
INSTRUCTIONS
Cut mutton into small pieces and wash it
Mix it with 1 tsp crushed pepper and 1 tsp salt. Marinate for 15 minutes
Add the marinated mutton into a cooking vessel
Add crushed ginger 1 small piece, 2 sliced green chili and 1 sliced onion
Add 1 glass water
Cook it until mutton is half cooked and keep it aside
Heat another cooking vessel and add 5 tsp coconut oil
Add cloves, cinnamon, cardamom and peppercorns
Add 2 sliced onions, 3 sliced green chili and 1 tsp salt
Saute until onion turns golden
Add 2 tsp coriander powder and saute for a minute
Now add 5 sliced potatoes and 2 slices carrots
Mix and close with lid until its half cooked
Now add the half-cooked mutton into the half-cooked potato / carrot
Add 1 cup coconut milk and 1 glass water
Close with lid until mutton is fully cooked
Now add 1 cup coconut milk, more water as required
Add enough salt for taste
Add crushed pepper 1 tsp or more as required
Add curry leaves
Boil it for 2 minutes and keep it aside
Heat a pan and add 5 tsp coconut oil
Add Cashews and saute
Add Raisins and saute until its fried
Add the cashew/raisin mix into the mutton stew
Mutton stew is ready to serve
Enjoy Mutton stew with Appam or bread!!
