Jarred beets are readily available on the shelf in your local grocery store - but roasting fresh beets is so easy to do and the taste is totally different from that found in a jar. The flavor of a roasted beet is almost naturally sweet in nature - you will be pleasantly surprised :) Enjoy.
Ivo’s Roasted Beets
Ingredients
• Fresh beets, 1 ½ lbs.
• 3 – 4 TBSP Extra Virgin Olive Oil (EVOO)
• ½ - 1 TBSP paprika
• ¾ - 1 TBSP dried oregano
• Salt to taste
Method
• Wash beets, peel them, and then cut into wedges (i.e. into quarters)
• Place in a bowl and drizzle the EVOO, paprika, oregano, and salt to taste
• Toss beets to ensure they are all evenly coated
• Add beets to a baking sheet, which is lined with parchment paper
• Two baking methods:
1) Preheat your oven to 375 degrees F., then cook beets for 45 – 60 minutes
2) Convection bake in your toaster oven, at 375 degrees F, for 20 – 25 mins

Notes:
• Cook time is much quicker in a toaster over, as you can see above
• You can also add fresh carrots to this mix – just prepare them the exact same way as the beets and mix them in together with the beets, at the time of seasoning and season the beets and carrots together
