Ingredients
Coconut flour : 1/3 cup
Baking powder :1/4 tsp
Blue berries :1/2 cup ( fresh or frozen )
Butter :2 tbsp
Eggs:3
Almond or coconut milk :2 tbsp
Honey :1 tbsp (optional )
Salt :1/4 tsp
VanillaEssence :1/4 tsp .
Grease or use cupcake liners in 6 tin muffin tray .
Mix coconut flour and baking powder . Keep aside
Melt butter a bit , whisk, then add eggs to vanilla essence in ingredient list . Blend well . Then add coconut flour .mix well and then fold in blue berries .
Transfer to muffin tray in equal portions and bake at 200C for 25 mts . Check with a tooth prick, bake for another 5 mts if needed .
