100 gms of heavy cream
8 gms gelatin
150 gms of mango purée

Mango mirror glaze
50 gms of white chocolate
1 tbsp of condensed milk
1 tbsp of glucose syrup
50 gms of mango purée
3 gms of melted gelatin
