This is the recipe for the authentic south of Italy's Meatballs in Tomato Sauce (Polpette Al Sugo). Just like my Grandma taught my Mother and my Mother taught me. A rich and incredible sauce with a deep fried veal meatball for pure tenderness.

For the Meatballs:
400 gr Ground Veal
2 Slices Brioche Bread
200 ml Milk
1 Egg
120 gr Parmesan Cheese
2 Tbs Parsley
Salt, Pepper
50 gr Flour
400 ml Vegetable Oil (to fry)
For Grandma's Sauce©
1 Stalk Celery
1 Small Onion
1 Carrot
1 Garlic Clove
1 Tbsp Parsley
1 Tbsp Olive Oil
50 gr Butter
200 gr Tomato Passata
Salt, Pepper
To Garnish:
Basil
Parmesan Cheese Wedges
