Dates Tamarind Chutney:
Ingredients:
Tamarind - 80 gms
Salt - 1/2 tsp
Slit Dates - 80 gms
Jaggery - 80 gms
Water - 3/4 cup
Chilli Powder - 3/4 tsp
Jeera Powder - 1 tsp
Chaat Masala - 1/2 tsp
Fennel Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Ginger Powder - 1/2 tsp
Preparation:
1.To a pan add water,tamarind,dates and jaggery.Allow it to boil,till it becomes soft.Let it cool and grind it into smooth paste.
2.Filter and discard the residue.
3.Pour this filtered mixture in pan,add 3/4th cup of water and allow it to boil.
4.To this add chilli powder,jeera powder,fennel powder,coriander powder,ginger powder and salt.
5.Allow it to boil,let it come to a thick consistency,then cool and store it in a dry container.

Red Garlic Chutney:
Ingredients:
Kashmiri Red Chilli - 11
Garlic - 9 cloves
Ginger - 1 inch
Jeera - 1/2 tsp
Chaat Masala - 1 tsp
Sugar - 1 tsp
Lemon Juice - 1 tbsp
Salt - 1/2 tsp
Water - 1/4 cup
Preparation:
1.Soak red chilli in hot water for 20 minutes.
2.Then put it in blender.To this add garlic,ginger,jeera,chaat masala,sugar,lemon juice,salt and water.
3.Grind it into a thick consistency. Store in dry container.

Green Chutney:
Ingredients:
Coriander Leaf - 2 cups
Pudina - 1 cup
Green Chilli - 2
Garlic - 2 cloves
Ginger - 1 inch
Lime Juice - 1 tbsp
Salt - As per the taste.
Chaat Masala - 1 tsp
Jeera Powder - 1 tsp
Roasted Gram - 1 tbsp (optional)
Preparation:
1.Add all ingredients and grind it into smooth paste.
2.Later,store it in dry container.
Basic Chaat Chutneys (Dates Tamarind Chutney,Red Garlic Chutney And Green Chutney)is ready now!
