This Smoked Mackerel recipe uses a camp smoker to get that perfect smokey flavour infused into the fish. This fish recipe works great with almost any type of fish however higher quality fish such as mackerel tend to absorb the smoke flavour better. This is a great recipe that can be made in almost no time, perfect as camping dish or something to make at home. If you’re camping without a fridge, use a cool esky to marinate your fish.

INGREDIENTS
- 1/2 Cup Brown Sugar
- 1 Cup Salt
- 1L Water
- Fish Fillets
METHOD
1. In a medium sized dish add brown sugar, salt, and a third of the water and mix together well.
2. Add fish and coat in marinade well.
3. Add in the leftover water.
4. Marinate in fridge for an hour to allow the flavours to set in the fish.
5. Light the smoker and lay fish onto the smoking trays.
6. Place the smoking compartment over the smoker and add the smoking trays and allow to smoke for roughly 15 to 20 minutes until the fish is cooked
7. Remove from smoker and serve with your favourite sides.
