1 eggplant
Feta cheese (goat cheese will work well, too)
pesto (recipe on my channel)
slice the eggplant into thick pieces. spray a pan with oil and grill those on medium heat, spray them again before turning over. I recommend spraying with oil instead of pouring the oil straight to your pan because eggplants tend to "drink" the oil, so you don't want to use too much oil and get a saggy eggplant.
done. assemble your sandwich by placing a generous spoonful of homemade pesto sauce, place the eggplants, feta cheese, and some more pesto. and enjoy a trip to the Balkans at the comfort of your kitchen 😁😁
