Ingredients
Egg - 4 nos
Onion - 3 nos
Tomato -2 nos
Green chilli - 3 or 4 nos
Ginger - 1 nos
Garlic - 9 or 10 nos
Dry red chilli - 4 nos
Red chilli powder -2 tbsp
Turmeric powder - 1 tbsp
Cumin seed powder - 1 tbsp
Fennel seed powder - 1 tbsp
Pepper powder - 1 tbsp
Mustard seed - 1 tsp
Salt - 1 or 2 tbsp
Oil - 2 or 3 tbsp
Method
Heat water in a pan add eggs and salt, boil them well.
Drain boiled eggs and put in a bowl filled with cold water .
Take a bowl add water and boil them well.
Then we have to crush ginger and garlic into smooth paste and keep aside.
Deshell the boiled eggs and keep aside.
Then remove the hot water from the fire and keep aside.
Heat oil in a pan add mustard seed ,let them splutter for a few seconds.
Add dry red chilli and crush ginger garlic paste, saute them well .
Then add chopped onion and green chilli ,saute for a few seconds.
Add curry leaves ,saute them well.
Sprinkle some salt and saute till onion become transluent .
Then add dry spices like red chilli powder and turmeric powder ,
Add cumin seed powder ,fennel seed powder and pepper powder .
saute until the raw smell of the spices completely disappears.
Then add chopped tomatoes and saute them well, till they become soften.
Add aqurate amount of water and salt ,stir them well and cook for 4 to 5 minutes.
Then add boiled eggs and mix them well.
Remove from fire and keep aside
Serve the tasty curry with Steamed rice cake or appam
