“FRITTER BATTER”
Sift the flour a bowl, separate 2 of the eggs, adding the whites to a medium bowl and the yolk to the flour
Add the salt and remaining 1 whole egg to the flour
Whisk the ingredients until smooth
Gradually whisk in the milk until the batter is smooth and fluid
Whip the egg whites, gradually adding the sugar, until they hold a soft peak
Gently fold the egg whites into the batter using a flexible spatula
The batter should be smooth and light
“FRITTERS”
Heat the oil to 350*F (180*C) in a large saucepan or deep fryer
Meanwhile, hull the strawberry. Stab each with a wooden skewer, keeping the strawberry at the end of the skewer so you can safely immerse if in the hot oil.
Combine the sugar and cinnamon in a shallow bowl
Dip the strawberry, one by one, in the batter
Carefully add them to the hot oil and cook until golden.
Work with no more than 2-3 strawberries at a time to keep the oil at a constant temperature.
Drain the fritters on paper towels and coat in the cinnamon sugar
Discard the skewers, let the fritters cool slightly, and serve.

100ml - milk
20g - sugar

1 - liter oil
30 - large strawberries 🍓
100g - sugar
1 - tsp. Ground cinnamon
