Gongura Pachadi with Green Chillies | Gongura Chutney | Roti Pachadi
Gongura pachadi also known as gongura chutney is an Andhra-style side
dish made with sorrel leaves, chilies, garlic, and other basic
spices. Served best with some hot
steamed rice and a dollop of melted ghee.
Recipe:
1) first pick the gongura leaves from the stems, wash them thoroughly, dry them with a kitchen towel and keep them aside.
2) In a pan add 1/4 cup of white sesame seeds and dry roast.
3) When they start to splatter take them to a plate.
4) Heat 3 to 4 tbsp oil in a pan.
5) fry the 5-6 green chilies, add 4-5 garlic cloves (whole), 1/4 tsp of cumin seeds Transfer them to a plate and set them aside to cool
6) In the same pan; Heat 3 to 4 tbsp oil add the leaves to the hot pan.
7) Fry until the leaves wilt completely. Set them aside to cool completely.
8) in a mixer jar add the roasted sesame seeds, 1/2 tbsp of salt, or adjust to taste. and powder.
9) in the same jar add the fried chilies, garlic cloves, tamarind, salt as per taste along with the gongura leaves to the mixer jar
10) add little water and blend until a smooth paste.
Tempering process :
1) in a small pan heat 2 to 3 tbsp oil.
2) When oil is hot add chana dal, urad dal, cumin seeds.
3) add crushed garlic, curry leaves, a pinch of turmeric, and fry.
4) add the tempering to the gongura pachadi and mix well.
Transfer to a clean air-tight glass jar and store in the refrigerator.
