Zucchini is tastier than meat, no one believes that I cook them so easily and tasty! Healthy and incredibly delicious! Spaghetti with zucchini pesto! Cook pasta this way and you will be delighted! Easy zucchini pasta recipe.
Ingredients for 4 persons:
0,7lb/320g of spaghettoni.
700g of zucchini.
30g of nuts.
20g of basil.
10g of mint.
2 cloves of garlic.
Extra virgin olive oil.
Salt.
Method:
Grate the Parmigiano, clean the nuts and cut the zucchini.
Bring to boil a pot of water and toast the nuts. Salt the water, blanch the zucchini, keep a little aside, and drain in water and ice.
Quickly sauté the zucchini kept aside with oil, garlic and mint. Blend the blanched zucchini with garlic, basil, mint, nuts, extra virgin olive oil and 1 spoon of spicy oil; add salt, Parmigiano and blend again.
Throw down the spaghetti; 3 minutes before the indicated time, drain the spaghetti in the pan and cook another minute with cooking water. Turn off the stove and stir with the zucchini pesto and cooking water.
Serve with plenty of sauce and sautéed zucchini.
