PINAKBET NA SALUYOT-@ATEJESKITCHENETTE
Original Ilocano recipe. A popular dish particularly in Ilocos Region.
Saluyot leaves- is also known as JUTE leaves or MOLOKHIA. It is rich in Vitamins and minerals that promote good health and well being. It is said, to prevent wrinkles and promote youthful- looking skin.
Cooking instructions:
1. Pour water in a pot enough to soak the leaves. Bring to boil.
2. Add plenty of crushed garlic, bagoong and chicken powder (optional) or any flavour enhancer of your choice.
3. Cover and Simmer for 2-3 mins, just to brings out the umami flavours.
4. Taste, to balance the saltiness of bagoong or fish paste. If you’re satisfied then…
5. Add the Saluyot, you can either use dried of fresh. Dried leaves take a bit longer to cook.
6. Stir and check if it’s already cook.
7. Once the leaves are cooked, add vinegar. DO NOT STIR AT THIS POINT. Cover the pot and simmer for at least 5 mins
8. Then taste again to balance the acidity of the vinegar with the saltiness of the bagoong.
9. Continue to cook until the mixture is almost dry. If you’re happy and satisfied… now …
10. Ready to serve… enjoy
Tip:
It is always better and safe to add less bagoong or fish paste at the beginning, so you can adjust later on according to your taste.
