Eating Peanuts like South Africans
Peanuts are also known as groundnuts or monkey nuts in the UK and in South Africa. Did you know that peanuts (#goober, #Pindar) are classified as legumes more than they are nuts and has been recognized as a superfood containing a variety of essential nutrients, vitamins, minerals, good fats and fibre which is great for good heart health and has a low glycemic index making it a diabetic friendly snack item. Be sure to eat the red skins as it contains essential antioxidants and phytochemicals that’s nutritionally beneficial. There are many different varieties of peanuts and the smaller Spanish cultivar is preferred for boiling but the larger varieties that’s popular in most parts of the southern United States of America is cultivated mostly for peanut butter and dried, salted peanuts among other culinary uses. South Africans prefer boiled peanuts rather than roasted because they are lower in calories, healthier and tastier than roasted or raw peanuts.
Peanuts are in full season during South African summers and is sold in markets where I purchased some or by vendors that come door to door selling them by the can-full. How to prepare Boiled Nuts
I’m using a pressure cooker.
Green or Raw ground nuts (The small Spanish variety is good for this type of preparation and eating)

Method
Wash thoroughly until all the sand is out. Pre-soak if necessary so the sand settles at the bottom and then rinse out a few times. Add to a pressure cooker, cover with water, add salt to taste, close the lid and boil for ten to twelve minutes. Release pressure, check to see if they are soft enough. Drain through a colander if it is or cook for a few more minutes. Cool slightly and enjoy hot. Boiled nuts must be stored in the refrigerator or alternatively in the freezer as they spoil easily. When desired, remove from freezer, thaw at room temperature, warm in the microwave before serving, then enjoy hot with your favourite beverage.
Alternatively, boil on stovetop until tender. This may take an hour or two. Cook uncovered or it can spill and make a mess on your stove top. Check every so often to see if water needs to be added.
Notes: If you need to purchase green or raw peanuts anywhere in North America, look for them in Asian markets or Eastern or Ethnic grocery stores. They are labelled as raw or green peanuts and are often kept wet. You may not necessarily get the small Spanish variety but I’ve found the larger variety like the green/raw Virginia peanuts available in Kensington Market in Toronto or T & T supermarket. Prepare as above but the taste will vary, nevertheless, you will be enjoying a healthy superfood lower in calories rather than the salted and roasted option.
