Beguni ||Crispy Eggplant || Eggplants Fritters
Besan/Gram Flour – 1 cup strain
Add 2 tbs rice flower to keep crispy longer(optional)
Salt – ½ teaspoon/ to taste
Turmeric – ¼ teaspoon
Chili powder – ¼ teaspoon/ to taste
Garlic paste - ¼ teaspoon
Ginger paste - ¼ teaspoon
Mix
Add water as needed
Here I needed ¾ cup water
Eggplant – 1 medium
Slice not to thin or thick
Leave in cold water
Drain and sprinkle some salt
Heat oil for dip fry
Dip in the mixture
Fry in

It is golden brown and Done!
Eggplants are crispy and yummy!
