In today's video I will be sharing another one of my prime rib roast recipes for bone in prime rib smoked on a pellet grill. It's Christmas week and for a lot of people that means prime rib. Whether you're cooking your prime rib roast on a smoker (my suggestion) or in an oven you can use this recipe to yield a wonderfully cooked and delicious prime rib. This bone in prime rib roast weighed in at just under 6 pounds and is a good size to feed a few people, and using the combination of rubs, and hickory pellets the end result was oh so amazing! So if you're looking for a delicious prime rib roast recipe for Christmas I highly recommend you give bone in prime rib smoked on a pellet grill a try!
Now lets go into the prep and cook on this prime rib roast recipe:
| Ingredients |
-Bone in prime rib roast.
-Worcestershire sauce

The Prep:
-Trim the fat off of the prime rib (optional).
-Tie the prime rib up with butchers twine.
-Let the prime rib sit out and come up to room temperature for at least 1-2 hours.
-Transfer to cooking rack (optional)
The cook:
-Fire up your pellet grill (or whatever cooker you're using) to 250º.
-Put the prime rib on the smoker and rotate the prime rib every 30-60 minutes for even cooking. I like to put the bone side of the prime rib towards my heat source to protect the meat while cooking.
-Put a probe in the center of the prime rib to monitor temperatures.
-Once the smoked prime rib roast has reached 110º degrees internally remove from the smoker and bring inside to rest. At this time crank your smoker (or whatever you're using to cook) up to as hot as it will go (ideally 500-600º)
-While the cooker is coming up to temperature, baste your prime rib roast with butter and cover it loosely in foil to rest.
-Once the cooker is up to its maximum temperature put the prime rib back on the cooker and let it cook until it reaches an internal temperature of 122º in the center, this will yield you a nice medium rare finished product. If you want it more done, take it to 128-130º or you preferred temperature. Just be sure to accommodate for the carryover cooking during the rest (4-10 degrees).
-Once the prime rib roast has reached 122º remove from cooker, tent loosely in foil, and let rest for 30 minutes.
-After the prime rib has rested slice and enjoy!
