About the video:
Marmalade is a fruit preserve made from the juice and peel of citrus fruits boiled with sugar and water. The well-known version is made from bitter orange, but it is also made from lemons, limes, grapefruits, mandarins, sweet oranges, bergamots, and other citrus fruits, or a combination. Citrus is the most typical choice of fruit for a marmalade, though historically the term has often been used for non-citrus preserves.
*Ingredients*
1.Oranges or kinnow..8no.
2.sugar..same weight of the orange pulp+juice around 650gms
3.One lime(juice)
*Method*
1.Take 2 oranges,cut them into halves.
2.Extract the juice.
3.take out all the fiber and pulp and keep aside the skin.
4.Take out the flesh part from the 6 oranges.(in
segments..see the video)
5.Keep aside the skin and fiber parts.
6.From the skin of the oranges remove the white portion,(see the video)because it will be very bitter.Discard the white part.
7.Then slice the orange rind (of 6 oranges)in to juliennes.(see the video)
8.Take a muslin cloth and put the pulp, fiber,and sqeeze out the juice.
It contains,flavour and natural pectin,which helps the marmalade to thicken.
8.Take a large vessel and add the juice,juliennes and the segmented oranges.
9.Measure it by weight.
10.Add the same weight sugar.
11.Add (1 lemon )the lemon juice also.
12.Sugar will sweeten the marmalade and it acts as a preservative also.
13.Place on high heat.
14.Cook for 30 minutes.(The time is totally subjective.)
15.Stir well.
16.Cook until syrupy.
17.To check the consistency..take a plate and pour little marmalade ,keep inside the fridge for 10 minutes.If it is very runny, marmalade is not ready.
18. After 10 more minutes the motion of the bubbles will also change.(check video)
19.Check again for the consistency by plate method.
20.Put the plate with the marmalade inside the fridge for 10minutes.
21.Take the plate and run the finger in the center.The line looks clear.(See the video)
22.The marmalade is ready.
23.After 1 hour bottle it.
24. Store the marmalade in fridge.
*Tips*
1.After one week,the marmalade will thicken more.The texture will look beautiful.
2.Dont over cook the marmalade.
3.Dont throw the fiber and fleshy part of the oranges.They contain natural pectin and flavour.
Tie it in a muslin cloth and boil it along with the marmalade.Then squeeze and take out the juice.
4.Make sure the bottle is a sterilised and dry one.
