Oh baby, have we got a recipe pho you! 🍲

Simmer time: 8 hours

Ingredients:
Broth:
2 lb rib bones
2 lb neck bones
2 lb marrow bones
1.5lb brisket
8 litres water
2 onions, charred
1 stock ginger, charred
1/2 tablespoon fennel seeds
1/2 tablespoon coriander seeds
1 cinnamon stick
8 cardamom pods
4 star anis
4 cloves
3 tablespoons fish sauce
2 cubes sugar
1/2 tablespoon kosher salt
Garnish:
Pulled beef rib beef
Brisket, sliced
Striploin, sliced
Rice noodles, cooked and strained
Onion, sliced
Green onion, sliced
Thai basil
Thai mint
Culantro
Chillies
Lime
Method:
1. Roast bones for 30 minutes until lightly caramelized.
2. Deglaze pan and add everything to the pot. Top with water and simmer for 6-24 hours.
3. Season and sear brisket, then add to simmering pot for 4 hours. Remove and chill. Slice as thin as possible.
4. Toast aromatics and add to the simmer with onions, ginger, sugar, salt and fish sauce.
5. Strain everything through a cheese cloth and adjust your seasoning.
6. Freeze your striploin for 30 minutes and slice paper thin.
7. Build your bowl with rice noodles, pulled beef rib, brisket and raw beef. Finish with paper-thin onions and more green onions.
8. Serve with garnished platter, soya, and fish sauce.
